Grilled Shitake Encrusted Buffalo Rib Steaks & Warm Black Fly Vinaigrette Salad
It has been a very wet spring and summer so far, up here on Mount Desert Island in Maine. It seems like a record year for black flies and now the multitude of several variety mushrooms are exploding; even in my house plants! I do like the earthy flavor of the shitake and take great pleasure in layering it, when powdered, in this recipe.
This edible mushroom, native to East Asia, is cultivated and consumed around the world. It’s most widely known by its Japanese name, shiitake, from the dead logs of the Japanese tree on which it is cultivated. One of the Chinese names refers to it as haugu "flower mushroom," which has a flower-like cracking pattern on the mushroom's upper surface (pictured here).
Grilled Shitake Encrusted Buffalo Rib Steaks with Warm Black Fly Vinaigrette Salad
Serves 2
Ingredients Steaks
2 8-ounce rib eye Buffalo steaks
¼ cup dried Shitake Mushrooms
½ teaspoon Tellicherry peppercorns
1/4 teaspoon salt
Ingredients Salad
½ cup sliced and cubed cucumber
2 slices of red onion finely cut
Ingredients Vinaigrette Dressing
1/3 cup honey
2 tablespoons red wine vinegar
2 teaspoon lemon juice
1 teaspoon Dijon style mustard
1 tablespoon dried black flies (substitute: poppy seeds)
1 teaspoon minced garlic
1/8 teaspoon cayenne pepper
¼ teaspoon sea salt
¼ teaspoon herbed pepper
Directions
1. Combine dried shitake mushrooms, black peppercorns and salt in spice blender and grind.
2. Whisk all vinaigrette ingredients in small saucepan over low heat until combined.
3. Combine all salad ingredients together in medium bowl, add dressing and toss. Divide between two plates.
4. Rub both sides of steaks with shitake powder mixture.
6. Grill steaks until juices appear on surface, (about 3 minutes per side). Serve steaks next to salad.
