Japanese Grilled Fish SteaksI love this marinate on halibut steaks. When we make this on our grill we make sure the coals are very hot. We don’t grill the fish close to the fire and it’s important to keep an eye on the fish because halibut can get dry very quickly. Unless it is very thick, halibut will usually cook in four minutes per side. This dish tastes great with a leafy green vegetable like: spinach, kale, collard greens, or Swiss chard.
Japanese Grilled Fish Steaks
Ingredients
4 fish steaks or fillets (halibut, shark, swordfish, tuna) 1 1/4 poundMarinade
1/4 cup reduced sodium tamari or soy sauce
3 tablespoons mirin (sweet rice seasoning), or dry sherry
2 teaspoon toasted sesame oil
1 teaspoon minced fresh ginger
3 scallions, chopped1. Combine ingredients for marinade and pour over fish in a glass or baking dish. Refrigerate for at least 30 minutes.
2. Preheat broiler or outdoor grill. Spray rack of broiler or grill with olive oil cooking spray. Drain and reserve marinade from fish.
3. Place fish on grill, or if using broiler, six inches from direct heat. Cook four to five minutes per side depending on thickness of fish. Baste with reserved marinade. Fish is done when flaky. Serve immediately.
Zone Tip Fish is an excellent source of low fat protein; it also contains an array of vitamins (a lot of B), and minerals (copper, iodine, phosphorus, and selenium). The oily fishes such as salmon, tuna, sardines and some shell fish have omega-3 fatty acids, however farm raised fish has little if any omega 3 fatty acids. All commercial salmon from the East Coast is farm raised.
