Bok Choy with Shitake Mushrooms and Shallots
This is a wonderful spring time recipe. The bok choy is high in vitamins A, C, and calcium and very low in calories. It cooks very quickly and has a very sweet taste.
This recipe can be prepared with baby bok choy or large bok choy. Shitake mushrooms have been used for centuries for medicinal uses and they taste great.
Bok Choy with Shitake Mushrooms and Shallots
Ingredients
1 large bunch bok choy or equivalent amount of baby bok choy. The leaves should be very green and not torn and the stems should be nice and white.
3 ounces shitake mushrooms
3 shallots
2 teaspoons olive oil
Herbamare to taste1. Wash the bok choy well, cut of the root end so that the leaves separate. Cut each leaf and stem down the center and then chop into small pieces
2. Clean the shitake mushrooms with a mushroom brush or a damp paper towel. Remove the stems and slice into thirds. Chop the shallots.
3. Heat the oil in a wok or large pan, add the shallots when hot and stir fry for a couple of minutes until soft. Add the mushrooms and toss for a couple of minutes. Then add bok choy and stir fry for a couple of minutes. The bok choy will shrink down very quickly. Do not overcook. Season with Herbamare or sea salt & herbs. Serve.
