Food and wine belong together. Syrah is an especially food friendly wine. Chimichurri sauce is of Argentine origin and comes with many variations. It is used both as a condiment to be put on your steak after cooking and as a marinade. I used it as a marinade in this recipe because I like to cook the flavors into the meat. If you prefer to use as a topping on your steak set aside a 1/4 cup and spoon over the cooked sirloin before serving. Use fresh herbs and lime juice for this recipe-it makes a difference.

Chimichurri Marinated and Grilled Flank Steak

It is used both as a condiment to be put on your sirloin after cooking and as a marinade. I used it as a marinade in this recipe because I like to cook the flavors into the meat. If you prefer to use as a topping on your sirloin set aside a 1/4 cup and spoon over the cooked sirloin before serving. Use fresh herbs and limejuice for this recipe-it makes a difference.
Ingredients
1-1/2 lb Flank Steak
1/2 cup Olive Oil
2 tablespoons fresh limejuice
1/4 parsley cup chopped
2 cloves garlic
2 tablespoons Basil
2 tablespoons Oregano
1 tablespoon Thyme
1/2 tsp Cumin
1 tsp hot pepper flake
2 tsp chili powder
Sea Salt and Pepper
Rinse and pat dry the flank steak
Season meat with course sea salt and pepper.
Place steak in non-reactive container and set aside.
For Chimichurri Marinade
Chop the garlic, basil, thyme, and oregano and combine with the olive oil, parsley, limejuice, pepper flakes
and chili powder.
Pour marinade over steak and turn to coat.
Marinate 3 hours, turning steak once or twice.
Cook on a hot grill 6-8 minutes on each side for medium rare.
Let rest 10 minutes before slicing.
Flank Steak is a relatively thin cut and is easy to overcook, so pay close attention to it! It has a grainy character and benefits by being sliced thinly on a bias.
